TASTING NOTES:

Notable red fruit on the nose, with cherries, crème de cassis and plum in abundance, with some earthy notes and hints of almond also present. The subtle use of oak contributes to a fresh style. Layers of fruit on the palate, with creamy tannins and a fresh finish.

IN THE VINYARD

Trellised, single irrigation per annum, heavy vendange Verte for low crop, and uniform ripeness early in season.

IN THE CELLAR

Harvesting at optimum ripeness, and then the fermentation is in open-top fermentation tanks. Fermented with a selected yeast culture at 28°C. Punching down and pump over three times daily. Pressed early with little skin contact after fermentation.
